Ingredients

  • 1 pound (454 g) ground beef
  • 4 cups diced potatoes
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (15 oz / 425 g) diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup shredded cheese, optional

Method

Preparation
  1. Cook the ground beef, diced onion, and minced garlic in a skillet until the beef is fully cooked. Drain off the excess fat.
  2. Transfer the diced potatoes, black beans, diced tomatoes, corn, and cooked beef mixture to the slow cooker.
  3. Season the mixture with chili powder, ground cumin, salt, and black pepper.
  4. Stir everything together thoroughly so the vegetables, beef, and seasonings are evenly distributed.
Cooking
  1. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender.
  2. If using the shredded cheese, scatter it over the casserole during the final 30 minutes of cooking. Cover and continue cooking until the cheese has melted.
Serving
  1. Serve the casserole warm.
