Ingredients

Pizza
  • 8 flour tortillas (or corn tortillas)
  • 1 lb / 454 g ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 8 tbsp enchilada sauce, divided
  • 8 oz / 225 g refried beans
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
Toppings
  • 1 tomato (Roma or beefsteak), seeds removed and diced
  • 1 small red onion, diced
  • 1/4 cup black olives
  • 1/4 cup sour cream
  • 2 green onions, finely diced
  • Oil, for pan frying

Method

Prepare the Beef
  1. Place the ground beef in a large skillet over medium heat. Cook for 5-8 minutes, breaking it into small pieces as it browns, then drain any excess grease.
  2. Add the taco seasoning, water, and 4 tbsp enchilada sauce to the cooked beef. Stir well and simmer for 1-2 minutes.
Assembly
  1. Spread the refried beans over 4 tortillas. Distribute the seasoned beef evenly over the beans, then add shredded cheese to each.
  2. Cover each filled tortilla with one of the remaining 4 tortillas to make 4 pizzas.
  3. Spread 1 tbsp enchilada sauce over each top tortilla, then divide the remaining shredded cheese over the pizzas.
Air Fryer
  1. Preheat the air fryer to 400°F / 205°C. Cook each pizza for about 5 minutes, removing it when the cheese has melted and the tortillas are crisp.
Oven
  1. Preheat the oven to 350°F / 175°C. Place the pizzas on a lined sheet pan with space between them.
  2. Bake for 8-10 minutes, until the cheese is melted and the tortillas are crisp.
Pan Fry
  1. Lightly coat a large lidded skillet with oil and heat over medium heat. Add one pizza, cover the skillet, and cook for 4-5 minutes, until the cheese melts and the bottom tortilla is crisp.
Serving
  1. Finish the cooked pizzas with diced tomato, red onion, black olives, sour cream, and green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to help retain crispness.
