Method
Marinate the Steak
- Combine 3 tbsp olive oil, 2 minced garlic cloves, 1 tbsp lemon juice, 1 tsp dried oregano, 1 tsp dried thyme, ½ tsp salt, and ¼ tsp black pepper. Coat the sirloin steak thoroughly and marinate for 30 minutes to 4 hours.
Prepare the Tzatziki
- Stir together the Greek yogurt, grated and squeezed cucumber, 1 tbsp lemon juice, 1 minced garlic clove, 1 tbsp chopped fresh dill, and salt and pepper to taste. Refrigerate the tzatziki until ready to use.
Make the Vinaigrette
- Whisk 3 tbsp olive oil with 2 tbsp lemon juice, 1 tsp honey, 1 minced garlic clove, ½ tsp dried oregano, and salt and pepper to taste until combined.
Cook the Steak
- Heat a skillet and sear the marinated sirloin for 4–5 minutes per side. Transfer the steak from the skillet, let it rest, then slice it thinly.
Assemble
- Divide the cooked grains between four bowls. Add the sliced steak, roasted chickpeas if using, cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, crumbled feta, and chopped fresh herbs.
Serve
- Spoon tzatziki over each bowl and finish with a drizzle of the vinaigrette.
Notes
For food safety, cook the steak to your preferred doneness; the article gives medium-rare as 130–135°F / 54–57°C and medium as 140–145°F / 60–63°C, then rest before slicing.
