Ingredients

  • 1 lb (454 g) ground beef
  • 4-5 medium potatoes, thinly sliced to about 1/4 inch
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup milk, optional
  • Fresh parsley, for garnish

Method

Preparation
  1. Preheat the oven to 375°F / 190°C. Slice the potatoes to about 1/4 inch thick, chop the onion, and mince the garlic.
Cooking
  1. Warm the olive oil in a large skillet over medium heat. Cook the onion and garlic until fragrant, then add the ground beef and cook until browned. Season with Italian seasoning, paprika, salt, and pepper.
Assembly
  1. Grease a baking dish. Arrange half of the sliced potatoes in the dish, followed by half of the cooked seasoned beef and half of the shredded cheddar cheese.
  2. Build a second layer with the remaining potatoes, ground beef, and shredded cheddar cheese. Pour the beef broth and optional milk evenly over the casserole.
Baking
  1. Cover the baking dish with foil and bake for 35-40 minutes.
  2. Remove the foil and scatter the grated Parmesan cheese over the top. Continue baking uncovered for 10 minutes, until golden brown.
Serving
  1. Allow the casserole to rest for 5 minutes, then garnish with fresh parsley and serve hot.

Notes

Slice the potatoes evenly so they cook at the same rate. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
