Ingredients
Method
Cooking
- Cook the ground beef in a large skillet over medium-high heat, breaking it into smaller pieces as it browns. Drain any excess grease.
- Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened and translucent.
- Mix the taco seasoning and tomato sauce into the beef and onion mixture.
- Lower the heat and simmer for 5-10 minutes, stirring occasionally.
- Add the black beans, corn, and chopped green chilies, stirring to distribute them throughout the beef mixture.
- Cook for 2-3 minutes more, until heated through, then remove the skillet from the heat.
Preparation
- Combine the softened cream cheese and sour cream in a medium bowl. Whisk or beat until smooth and creamy.
- Preheat the oven to 350°F / 175°C.
- Lightly grease a 9x13-inch baking dish.
Assembly
- Cover the bottom of the baking dish with a layer of flour tortillas, overlapping or cutting them as needed to fit.
- Spread half of the beef mixture evenly over the tortillas.
- Layer half of the sour cream and cream cheese mixture over the beef.
- Add half of the shredded cheddar cheese.
- Repeat the layers with the remaining tortillas, beef mixture, sour cream and cream cheese mixture, and cheddar cheese.
Baking
- Cover the dish with aluminum foil and bake at 350°F / 175°C for 20 minutes.
- Remove the foil and continue baking for 10-15 minutes, until the cheddar is melted and bubbly, the casserole is heated through, and the top is lightly golden brown.
- Let the casserole rest for about 10 minutes before cutting.
Serving
- Cut the casserole into squares and serve hot with optional shredded lettuce, diced tomatoes, salsa, guacamole, or extra sour cream.
Notes
