Ingredients

Meatloaf
  • 1 ½ lbs (680 g) ground beef
  • ½ lb (227 g) ground Italian sausage
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bread crumbs
  • 2 large eggs
  • ½ cup Parmesan cheese, grated
  • 2 tbsp Italian seasoning
  • 1 tbsp parsley, chopped
  • ½ cup milk
  • Salt and pepper to taste
Filling
  • 1 cup mozzarella cheese, shredded
  • 1 cup spinach, chopped (optional)
  • ¼ cup marinara sauce
Topping
  • ½ cup marinara sauce
  • ¼ cup Parmesan cheese, grated

Method

Preparation
  1. Preheat the oven to 375°F / 190°C.
  2. Place the ground beef, Italian sausage, onion, garlic, bread crumbs, eggs, ½ cup Parmesan, Italian seasoning, and parsley in a large bowl. Add the milk, salt, and pepper, then mix until the ingredients are evenly incorporated.
  3. Transfer the meat mixture to a baking sheet and form it into a 9x12-inch rectangle.
Filling
  1. Create a lengthwise well through the center of the meat mixture. Add the mozzarella, spinach if using, and ¼ cup marinara sauce to the well.
  2. Bring the meat over the filling and press the edges together firmly to enclose it completely. Shape the sealed mixture into a loaf.
Baking
  1. Coat the top of the loaf with the remaining ½ cup marinara sauce and scatter ¼ cup Parmesan cheese over it.
  2. Bake for 45-55 minutes, or until the internal temperature reaches 160°F / 70°C.
  3. Remove the meatloaf from the oven and allow it to rest for 10 minutes before slicing.
Serving
  1. Slice the rested meatloaf and serve with extra marinara sauce if desired.

Notes

Seal the meatloaf completely around the filling before baking to help keep the mozzarella, spinach, and marinara inside.
