Ingredients

  • 1 package (12 oz / 340 g) pork or chicken dumplings
  • 4 cups low-sodium chicken broth
  • 1 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 2 green onions, chopped, for garnish
  • 2 cups fresh spinach or bok choy
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Oil, for sautéing

Method

Preparation
  1. Warm a large pot over medium heat. Add a splash of oil, then cook the minced garlic and grated ginger for about 1 minute, until fragrant.
  2. Add the chicken broth and bring it to a gentle boil.
  3. Place the pork or chicken dumplings into the simmering broth and cook until tender.
  4. Add the fresh spinach or bok choy and soy sauce. Cook for 2–3 minutes, until the greens have wilted.
  5. Stir in the sesame oil immediately before serving.
  6. Divide the potsticker soup among bowls and finish with the chopped green onions.

Notes

For the best leftover texture, keep the dumplings stored separately from the soup and combine them when reheating.
