Ingredients

  • 1 lb (454 g) chicken breast, diced
  • 1 cup rice
  • 1 cup light cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for cooking

Method

Cooking
  1. Warm olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned.
  2. Add the onion, bell pepper, and garlic. Cook until the vegetables have softened.
  3. Season the chicken and vegetables with Cajun seasoning, salt, and black pepper, stirring to distribute the seasonings.
  4. Stir in the rice and chicken broth. Bring to a boil, then lower the heat, cover the skillet, and simmer for 15–20 minutes, until the rice is cooked.
  5. Add the light cream cheese and Parmesan to the cooked chicken and rice. Stir until the cheeses have melted and the mixture is creamy.
  6. Verify that the chicken reaches an internal temperature of 165°F / 74°C before serving.
  7. Serve hot, with fresh parsley or green onions as an optional garnish.

Notes

Keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth to help maintain the creamy texture.
