Ingredients

  • 1 tablespoon vegetable oil
  • 1 ring andouille sausage, sliced into ¼-inch rounds
  • 1 large onion, diced
  • ½ cup diced celery
  • ½ cup red bell pepper, seeded and diced
  • 2 teaspoons minced garlic
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup mild cheddar cheese, shredded
  • Chopped parsley, for garnish

Method

Preparation
  1. Heat the vegetable oil in a large pot over medium heat. Add the sliced andouille sausage and cook until it starts to brown.
  2. Add the onion, celery, red bell pepper, and garlic. Cook for about 5 minutes, stirring occasionally, until the vegetables have softened.
Cooking
  1. Add the Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Stir until the seasonings are evenly distributed through the sausage and vegetables.
  2. Pour in the chicken broth and add the cubed potatoes. Bring the soup to a boil, then lower the heat and simmer for 15 to 20 minutes, until the potatoes are tender.
  3. Stir in the heavy whipping cream and shredded cheddar cheese. Continue heating until the cheese is incorporated and the soup is warmed through. Taste and adjust the seasoning if needed.
Serving
  1. Ladle the Cajun potato soup into bowls and garnish with chopped parsley. Serve hot.

Notes

For a thicker soup, mash some of the cooked potatoes with a fork before serving.
