Ingredients

Beef Filling
  • 1 lb (454 g) lean ground beef
  • 2 tablespoons taco seasoning
  • 1/2 cup (120 ml) water or beef broth
Assembly
  • 1 cup (240 g) refried beans
  • 1 cup (185 g) cooked Mexican rice
  • 4 large burrito-size flour tortillas, at least 10 inches wide
  • 1 cup (28 g) corn chips, lightly crushed
  • 1 cup (240 g) warm nacho cheese dip
  • 1 cup (113 g) shredded Mexican cheese blend
  • 1/2 cup (120 g) sour cream
  • 1/2 cup (120 g) restaurant-style salsa, optional

Method

Cooking
  1. Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces as it cooks. Drain excess grease if needed.
  2. Stir the taco seasoning and water or beef broth into the cooked beef. Simmer until the liquid reduces and thickens enough to coat the meat.
Preparation
  1. Heat the refried beans and cooked Mexican rice separately, using pans or the microwave, until both are heated through.
  2. Warm the nacho cheese dip until it reaches a smooth, pourable consistency.
  3. Heat the flour tortillas until soft and flexible, then place them flat on a work surface.
Assembly
  1. Spread the refried beans across the center of each warm tortilla.
  2. Divide the Mexican rice, seasoned beef, crushed corn chips, warm nacho cheese, and shredded Mexican cheese among the tortillas.
  3. Add sour cream and the optional salsa over the filling.
  4. Bring the sides of each tortilla toward the center, then roll from the bottom upward, keeping the filling enclosed.
Serving
  1. Serve the burritos immediately, or place them seam-side down in a skillet and toast until the outside is lightly crisp.

Notes

Warm the tortillas before assembling, and avoid overfilling them so they roll easily without tearing.
