Preparation
- Heat the oven to 350°F / 175°C. Grease a 9x5-inch loaf pan or prepare it with parchment paper.
- Place the ripe bananas in a large mixing bowl and mash them with a fork or potato masher until mostly smooth.
- Stir the melted butter and granulated sugar into the mashed bananas until well combined.
- Add the eggs individually, mixing between additions, then blend in the vanilla extract.
- In a separate bowl, whisk the all-purpose flour, baking soda, salt, cinnamon, and nutmeg together.
- Add the dry mixture gradually to the banana mixture, folding just until the flour disappears. Avoid overmixing.
- Fold the chopped walnuts or pecans into the batter if using.
Baking
- Transfer the batter to the prepared 9x5-inch loaf pan and smooth the surface. Gently tap the pan against the counter to help remove large air bubbles.
- Bake at 350°F / 175°C for 55 to 65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the banana bread to cool before slicing and serving.
Notes
